Looking back on this cake from a September, I am very proud of the clean lines and elegant black, white and pink colour scheme. This cake was donated to the Quinte Ballet School of Canada for their 40th anniversary celebration.
The cake was three layers of vanilla butter cake with vanilla buttercream, and the logo and ballet shoes were made of gumpaste.
That night I received a phone call thanking me, and then later, a letter arrived from the board of directors, which said,
"It looked stunning and tasted even better. It was front and centre on our buffet table and everyone enjoyed it immensely...."
