Two-toned Purple Rosettes Wedding Cake with Cupcakes

One of the most beautiful cupcake towers I have done this year was for a wedding party on Canada Day weekend, in Napanee, Ontario.  The cupcake flavours were chocolate and red velvet, and the top cake was red velvet with cream cheese filling.  All rosettes were vanilla buttercream, with a few silver dragees to accent the colours.  There was a mixture of mini cupcakes and regular-sized cupcakes.  I should mention my husband, Mr. Man, builds many of our cupcake towers himself!

The heat wave we have had this July has not been nice to my buttercream cakes, but with the air-conditioning on high, I drove the hour it took to get there without anything melting.  I have since had many compliments on this cake, and am extremely pleased with it myself!

The rain has finally arrived here after days and days without.  I hope to start seeing green again soon instead of the brown, dry grass, and limping leafy trees.  I hope you are staying cool where you are, and enjoying the summer!

Erin
